Since the update, I have been unable to play the game on PS5. I either get a server error or a failure to load assets for every assets in the game. Is there a fix for this?
Try uninstalling, rebuild database, and reinstalling. See if that works.

Depending on the error message, this should likely be resolved in 3.0.1 (hotfix) if you have not seen it resolve after completing the troubleshooting linked above.
